- 3 ounce Cheddar cheese, 1/2" cubes about 1/2 c.
- 1 Tbsp. Jalepeno pepper seeded & chopped or possibly to taste
- 1/3 c. Butter, cool, cut in 1/2" cubes
- 3/4 c. Flour, all purpose
- 1/4 c. Cornmeal
- 1/2 tsp Salt
- 1/4 tsp Chili pwdr
- 1/4 tsp Mustard, dry
- 4 Tbsp. -Water, ice

- Preheat oven to 400F. Process cheese and jalepeno in food processor until minced in 1/4" pcs. Add in butter, pulse on and off until size of small peas. Stir flour with cornmeal, salt, chili pwdr and mustard in small bowl until blended. Add in to mix in processor, pulse on and off just until blended. Sprinkle water proportionately over mix in processor. Pulse on and off just until dough begins to create into a ball. Shape dough into 8" disk. Wrap in plastic wrap; chill until hard sufficient to roll, about 30 min. On floured surface, roll dough to 1/4" thickness. Cut in 2" rounds with cookie cutter or possibly wine glass. Transfer to ungreased baking sheet. Prick each cracker once with fork. Bake in preheated oven for 10 to 12 min or possibly until crisp. Transfer to rack to cold. Store in airtight container.
