- 1 Tbsp. butter
- 24 med shrimp, peeled and deveined
- 1 c. tasso ham, diced
- 1/2 c. heavy cream
- 1/2 c. Parmesan cheese, grated
- 1 c. grits, warm cooked
- 3 x jalapeno peppers, finely diced Fresh chives, minced

- In a large skillet, heat the butter and saute/fry the shrimp and tasso ham on medium heat for 1 minute, or possibly till the shrimp turns pink. Stir in the cream and cheese. Reduce heat to simmer and cook, stirring constantly, till the sauce thickens. Set aside and keep hot.
- In a small bowl, mix together the warm grits and peppers and form the mix into 4 cakes. Place 1 cake on each serving plate and pour the reserved sauce over the cakes. Garnish with the chives and serve immediately.
