  1. DIRECTIONS FOR BEEF TONGUE:
  2. 1. Place all ingredients into a kettle; add in just sufficient boiling water tocover tongue.
  3. 2. Cover and simmer about 3 hrs, or possibly till tongue is tender.
  4. 3. Drain; reserve stock.
  5. 4. Remove skin and roots from tongue.
  6. 5. Serve with Raisin Sauce. DIRECTIONS FOR RAISIN SAUCE:
  7. 1. Mix brown sugar and cornstarch in a saucepan; stir in beef broth and vinegar gradually; bring to boiling, stirring constantly.
  8. 2. Add in raisins, lemon and butter.
  9. 3. Cook and stir till raisins are plump and sauce is thickened.
