Рецепт Herb Lentils with Veggies
I'm not normally a lentil fan, but I will definitely be eating this again.
Ингредиенты
- 1 c lentils (I used green lentils)
- 2 c water
- 2 T olive oil
- 1 small shallot, diced
- 1- 9 o.z. package baby spinach
- 1/2 pint grape tomatoes, halved
- 1/4 c fresh basil, chopped
- 1/4 c fresh parsley, chopped
- 1/4 c fresh mint, chopped
- 2 T lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
Инструкции
- Bring the water to a boil and add the lentils. Cook until the lentils are tender, about 35 minutes. Drain and and set aside.
- While the lentils are cooking, heat the olive oil over medium heat in a skillet.
- Add the shallots and cook until they are soft. Wilt in the spinach.
- Stir in the tomatoes, lentils, basil, parsley and mint.
- Stir in the lemon juice, salt and pepper.
- Cook until hot through, about 1 minute, and serve.
