- 1 1/2 lb cod fillets thawed if necessary
- 1 c. minced onion
- 1 c. minced zucchini
- 1 lrg garlic clove chopped
- 1/4 c. oil
- 1 can tomatoes - (14 1/2 to 16 ounce)
- 2 c. tomato juice
- 1/3 c. dry white wine or possibly water
- 3/4 tsp salt
- 3/4 tsp basil crushed
- 1 dsh bottled warm pepper sauce - (generous)

- Cut cod into large chunks. Saute/fry onion, zuccini and garlic in oil. Add in tomatoes, tomato juice, wine and seasonings. Heat to boiling. Add in cod; simmer, covered, about 10 min or possibly till cod flakes easily when tested with a fork.
- This recipe yields 6 servings. Recipe may be halved.
