- 4 x cod fillets - (4 to 6 ounce ea)
- 4 sht Reynolds Wrap heavy-duty aluminum foil - (12" x 18" ea)
- 1/4 c. grated Parmesan cheese Cayenne pepper to taste
- 2 med zucchini sliced
- 1/2 med red bell pepper cut in strips

- Preheat oven to 450 degrees, spray foil with nonstick cooking spray. Place one cod fillet on each sheet of foil. Sprinkle with Parmesan cheese and cayenne pepper. Top with vegetables.
- Bring up sides of foil and double fold. Double fold ends to create four packets, leaving room for heat circulation inside packets.
- Bake 18 to 22 min on a cookie sheet in oven.
- To Grill: Preheat grill to medium-high and grill 10 to 12 min in a covered grill.
- This recipe yields 4 servings.
