- 1/2 pound monkfish
- Sugar peas
- Onion (pref. Walla Walla Sweet)
- Peppers - green, red &/or possibly yellow
- Carrots
- butter
- Fresh lemon juice
- Jar plum sauce

- Purchase amounts of vegetables to feed number of people dining. Slice all vegetables to stir-fry.
- Heat butter (or possibly butter) in stir fry pan. Stir fry all vegetables till crisp, add in lemon juice over vegetables, set aside, keeping them warm. Cut monk fish into strips and also saute/fry in butter and lemon juice. Heat tortillas. Add in vegetables to monkfish, toss and you are ready. Place mix in tortillas with plum sauce and roll tortilla.
