- 1/4 red onion, thinly sliced
- 1/2 English cucumber, thinly sliced
- heirloom tomato, thinly sliced
- 3 ounces low fat feta cheese, crumbled
- Kalmata olives and dolmades (stuffed grape leaves) on the side – optional
