- 1 can mandarin oranges
- 1 1/2 c. cooked rice
- 1/3 c. mayonnaise
- 2 tbsp. minced pecans
- 2 tbsp. snipped parsley
- 1 tbsp. sliced green onion
- 8 lg. thin slices boiled ham
- 1/4 c. orange marmalade
- 1 tbsp. lemon juice
- 1/4 teaspoon grnd ginger
- Parsley sprigs

- Reserve 8 orange sections. Drain the remainder and chop. Then combine with the cooked rice, mayonnaise, pecans, parsley, and onion. Divide mix among ham slices. Roll ham around filling and place seam side down in 10 x 6 x 2 inch baking dish.
- Combine marmalade, lemon juice and ginger; brush over roll-ups. Bake uncovered at 350 degrees for 25-30 min. Garnish with reserved oranges.
