- 1 tsp vegetable oil
- 4 x scallions, trimmed and sliced diagonally
- 1 x clove garlic, chopped
- 1 tsp grated gingerroot
- 1/2 c. diagonally sliced green beans
- 2 c. sliced red cabbage
- 2 Tbsp. water
- 1 Tbsp. minced fresh parsley
- 1 c. minced fresh spinach
- 1 c. cooked couscous or possibly pasta Tamari or possibly soy sauce, to taste

- Makes 4 servings. VEGAN
- In large nonstick skillet over medium-high heat, heat oil.
- Stir-fry scallions, garlic, gingerroot and green beans 5 min. Add in cabbage and water; cover pan and steam vegetables 2 min. Add in parsley and spinach; sir-fry till spinach wilts, about 1 minute. Add in couscous or possibly pasta; stir-fry 1 minute. Add in tamari or possibly soy sauce to taste.
- Makes 4 servings.
