- 2 med yellow summer squash
- 3 Tbsp. mayonnaise
- 1 Tbsp. salsa verde (bottled or possibly homemade)

- Heat grill to medium-high heat. Cut squash in half lengthwise, then across into 1-inch slices to create half-moons (you should have about 48 pcs). Alternating colors, thread 6 pcs of squash onto each of 8 skewers. Mix mayonnaise and salsa.
- Brush half the mayonnaise mix over all surfaces. Cover and grill 4 to 5 min, turn, brush with remaining mayonnaise mix and grill 4 to 5 min more, till lightly charred in spots.
