- 1 tsp Extra virgin olive oil
- 5 x Garlic cloves, chopped
- 3 can (28 ounce.) whole tomatoes, liquid removed and coarsely minced
- 1/2 c. Minced fresh parsley, divided
- 1 1/4 lb Large shrimp, peeled and deveined
- 1 c. Crumbled feta cheese
- 2 Tbsp. Fresh lemon juice (i just used one whole lemon, didn't measure)
- 1/4 tsp Freshly grnd pepper

- Now which we have all these tips on cleaning shrimp, here is a yummy way to cook them! It is from the 1997 Cooking Light Annual recipes. We had it for dinner tonight and really liked it.
- Preheat oven to 400. Heat oil in a large dutch oven over medium heat till warm. Add in garlic; saute/fry 30 seconds. Add in tomatoes and 1/4 c. of the minced parsley; reduce heat and simmer uncovered for 10 min. Add in shrimp and cook 5 min. Pour mix into a 13x9 inch baking pan; sprinkle with feta cheese. Bake at 400 for 10 min. Sprinkle with remaining parsley, lemon juice and pepper.
- Serves 6.
- Note: I also added about 8 minced Kalamata olive along with the shrimp.
