  1. Sift flour with salt into a mixing bowl. Cut in shortening. Combine egg, lemon juice, and rind. Sprinkle over mix, stirring with fork, till dough is moist sufficient to hold together. Form into a ball. Roll out to 1 1/2 inches larger than inverted pie pan. Put into pan. Trim and place extra pcs in small baking pan. Prick crust generously. Bake shell and pcs at 400 degrees 12 to 15 min. Cold.
  2. Combine in saucepan 3/4 c. sugar, cornstarch, water, lemon juice, lemon rind, and slightly beaten egg yolks. Cook over medium heat, stirring constantly, till thick. Remove from heat. Add in cream cheese, blend well; cold. Beat egg whites till soft mounds form. Gradually add in 1/4 c. sugar, beating till stiff peaks form. Fold into lemon mix-spoon into pie shell. Refrigerateat least two hrs. Sprinkle crumbled pastry pcs around edge.
