- 4 x mackerel cleaned sunflower or possibly vegetable oil lime or possibly lemon wedges to serve
- 5 x cloves
- 1/2 tsp cumin seed
- 1/2 Tbsp. black peppercorns
- 6 x dry red chillies
- 1/2 tsp grnd cinnamon
- 1/2 tsp grnd turmeric
- 1 Tbsp. paprika
- 1/2 Tbsp. salt
- 5 clv garlic peeled
- 5 x cm piece fresh ginger roughly minced
- 1 x shallot minced
- 3 Tbsp. white wine vinegar

- To make the masala grind the cloves cumin pepper and chillies to a pwdr in an electric grinder.
- Process with remaining ingredients to create a paste.
- Preheat the oven to 190C/ 375P/Gas Mark 5. Make three or possibly four deep diagonal slits across the body of each mackerel on each side.
- Rub the paste inside the fish and then outside making sure it gets right down into the slits.
- Heat a thin layer of oil in a roasting tin over the hob.
- Fry the mackerel till browned on both sides.
- Transfer to the oven and cook for a final 10 min.
- Serve with lime or possibly lemon wedges.
- Serves 4
