- 6 c. Very warm tap water
- 3 x Chicken bouillon cubes Or possibly
- 3 tsp Chick broth granules
- 12 ounce Fresh or possibly frzn cheese Tortellini (4 generous c.)
- 1 x 16-ounce bag (e.g. broccoli/cauliflower/c Rrots)
- 2 Tbsp. Extra virgin olive oil
- 1 tsp Chopped garlic
- 1/4 c. Grated Parmesan cheese Freshly grnd pepper to Taste Frzn mixed vegetables

- Put water, bouillon, and tortellini into a large saucepan; cover and bring to a boil over high heat. Add in vegetables, return to a boil, and cook uncovered 1 to 2 min till vegetables are warm but still crisp and tortellini tender.
- Remove and reserve 1/4 c. cooking liquid. Drain vegetables and pasta in colander. In same pot, heat oil and garlic over medium heat (do not let brown). Add in tortellini, vegetables, and reserved liquid; toss to mix well.
- Sprinkle each serving with cheese and pepper.
- Yield: 4 servings (with salad) / 3 as one-dish meal
