  • 250 gm lean chopped beef
  • 250 gm lean chopped pork
  • 2 x level tbsp plainflour
  • 1/2 tsp salt
  • 1/2 x onion peeled and grated generous grating of nutmeg
  • 1 lrg egg butter and oil to fry lingonberry sauce to serve

  1. Combine everything well then season generously with salt and pepper.
  2. Shape into about 20 little balls then refrigeratefor 1 hour.
  3. Heat 25g butter and 1 tbsp oil in a frying pan and fry the frikadeller in 2 batches for about 10 min gently turning.
  4. Drain on kitchen paper and serve wane dipped into lingonberry sauce.
  5. Make the meatballs in advance and reheat in a low oven till hot. Wild lingonberry sauce is available from delicatessens and supermarkets; or possibly by mail order for $2 p&p from the Teesdale Trencherman on 01833 638-370.
