- 1 1/2 lb boneless lamb, preferably from shoulder, excess fat removed
- 1 med onion, peeled and quartered
- 1 x egg Salt and pepper
- 1/4 c. chopped shallot or possibly white onion
- 1/4 c. chopped parsley or possibly mint Juice of 1/2 lemon
- 4 x hard rolls or possibly hamburger buns Roasted red peppers, optional.

- Prepare a charcoal grill or possibly heat a gas grill or possibly broiler; fire should be moderately warm and the rack 4 to 6 inches from the heat source. Cut lamb into large chunks and put in container of a food processor; process till well minced. Add in onion and egg, along with salt and pepper, and process till quite smooth. With wet hands, shape into four kofte burgers.
- Grill kofte, undisturbed, till nicely browned on one side, about 5 min.
- Turn and brown the other side. These can be medium to well done and will still be moist.
- While meat is cooking, combine shallot, parsley and lemon juice, adding a healthy pinch of salt. Serve meat on rolls or possibly buns. Garnish with shallot mix and some red peppers.
