- 1 x Possum
- 1 quart Water
- 4 Tbsp. Salt Marinade
- 1 c. Flour
- 1/8 tsp Paprika Freshly-grnd black pepper to taste
- 1 pch Tarragon
- 1 pch Thyme Oil Margarine

- Soak possum for 2 hrs in salted water. Rinse and dry meat well. Cut meat into chunks to fry. Marinate meat in your favorite marinade for 7 hrs. Coat each piece with a mix of flour, paprika, pepper, tarragon and thyme. Fry chunks of prepared possum in oil and margarine till golden brown-brown.
