  1. Preheat oven to 350 degrees. Spray two 8 inch round cake pans with vegetable oil.
  2. In a medium bowl, sift together flour, salt and baking pwdr. Set aside.
  3. In a large mixing bowl, cream together butter and sugar till fluffy. Add in egg and beat well. Add in flour mix alternately with evaporated lowfat milk. Mix in vanilla and almond extracts and minced figs.
  4. Divide batter into the prepared cake pans. Bake for 30 min, or possibly till a toothpick inserted into the center comes out dry.
  5. To make filling, combine 2 c. figs, brown sugar, water and lemon juice in a saucepan. Bring to a boil. Reduce heat to a simmer and cook till thickened, about 20 min. Spread thinly between layers of cake and on top.
