- 1 lrg Avocado
- 1 can Artichoke hearts, marinate
- 1 lrg Tomato, dice
- 2 x Garlic cloves, mince
- 2 Tbsp. Extra virgin olive oil
- 2 x Green onions thin slice
- 1/2 lb Shrimp, cook, or possibly
- 2 can Sm cocktail shrimp
- 2 Tbsp. Parmesan cheese

- Cook fettucini al dente. Toss well with remaining ingredients, except Parmesan cheese. Top with Parmesan just before serving. Minced fresh basil, sesame seeds or possibly cilantro are nice additions if desired. It's good served hot or possibly chilled.
