  • 1 x green bell pepper cut into 1/4" dice
  • 1 c. peeled, seeded and diced cucumber
  • 1 c. minced scallions
  • 3/4 c. minced flat-leaf parsley
  • 1/2 c. coarsely-minced fresh mint
  • 1 c. coarsely-minced lettuce, (such as red oak leaf)
  • 2 x garlic cloves Salt to taste Freshly-grnd black pepper to taste
  • 1/4 c. freshly-squeezed lemon juice
  • 1/3 c. extra-virgin extra virgin olive oil
  • 1 1/2 tsp grnd sumac (available in Middle Eastern groceries)
  • 2 c. peeled, seeded and diced plum tomatoes
  • 2 c. crumbled toasted pita

  1. In a large salad bowl combine pepper, cucumber, scallions, herbs and lettuce. Crush garlic and chop it with 1/2 tsp. salt to a paste. Combine in a small bowl with lemon juice, extra virgin olive oil, sumac and pepper. Whisk lemon dressing into salad ingredients, toss to mix, cover and chill at least 1 hour and up to 3.
  2. Ten min before serving, add in tomatoes and pita and toss well; season with salt and pepper.
  3. This recipe yields 4 servings.
