- 1 lg. cucumber, peeled, halved lengthwise, seeds removed
- Salt
- 12 ounce feta cheese, liquid removed
- 1/2 c. finely minced mild onion
- 1/4 c. lemon juice
- 1/4 c. extra virgin olive oil
- Freshly grnd pepper
- Mint sprigs
Инструкции
- Score cucumber with tines of fork. Sprinkle with salt and let stand for 20 min. Crush cheese with fingertips or possibly fork and mix thoroughly with onion, lemon juice and oil. Season with pepper.Drain, rinse and slice cucumbers. Put together with cheese mix. Place in shallow serving dish and decorate with mint sprigs. Refrigerate about 30 min before serving.
