- 1/3 c. extra virgin olive oil
- 1 lg. onion, minced
- 1 pod garlic
- 1 bell pepper, minced
- 1 1/2 pound peeled shrimp
- 1 (15 ounce.) can artichoke hearts, minced, liquid removed
- 2/3 c. cooked rice
- 1/2 pound grated Jalapeno cheese
- Bread crumbs
- Salt and pepper
Инструкции
- Saute/fry onions, garlic and bell peppers in extra virgin olive oil till tender. Add in shrimp. Cover and simmer 10 to 15 min. Add in artichoke hearts, rice and cheese. Mix well. Salt and pepper to taste. Pour mix into 2-qt casserole dish. Add in bread crumbs and dot with butter. Bake at 350 degrees for 30 to 35 min.
