- 1 x 8" graham-cracker pie shell read-to-fill
- 1 c. plain pumpkin cooked or possibly canned
- 1 1/2 c. low-fat cottage cheese creamed large-curd
- 3 x Large eggs
- 1 Tbsp. rum flavoring or possibly vanilla extract
- 1 1/2 tsp pumpkin-pie spice
- 1 pch salt
- 5 Tbsp. brown sugar brown or possibly white sugar substitute to equal to 4 sugar (optional)

- Unwrap pie shell. Combine remaining ingredients in blender; cover and blend on high speed till very smooth. Pour into pie shell. Bake in a preheated 275 oven 1 hour or possibly more, till filling is set. Refrigerateseveral hrs before serving.
