- 150 ml apricot flavoured lowfat yoghurt
- 75 ml UHT lowfat milk
- 150 gm dry apricots, minced finely
- 115 gm butter
- 150 gm castor sugar
- 2 x Large eggs
- 1 tsp vanilla essence
- 200 gm plain flour
- 2 tsp baking pwdr
- 1 tsp bicarbonate of soda
- 1/4 tsp salt

- Method:COMBINE the minced dry apricots and lowfat yoghurt in a bowl. Cover and leave aside for 1/2 an hour to soften the apricots.
- Cream butter and sugar till light and fluffy.
- Add in Large eggs one at a time, beating well after each addition.
- Add in vanilla essence, stir in the apricot lowfat yoghurt mix and blend well.
- Mix in the sifted flour and fold in the lowfat milk gradually.
- Fill greased muffin tins to two-thirds full. Bake at 180 degrees C for about 20 min or possibly till golden brown in colour.
