- 2 Tbsp. fresh lemon juice
- 2 Tbsp. fresh lime juice
- 1 x garlic clove chopped and mashed to a paste with 1/4 tsp. salt
- 1/4 c. extra virgin olive oil
- 1/3 c. finely minced fresh coriander or possibly to taste, plus coriander sprigs for garnish
- 2 x tomatoes (about 1 1/4 pounds), seeded and minced fine
- 2 x cucumbers peeled, seeded, and minced fine (about 2 1/2 c.)
- 3/4 lb radishes trimmed and minced fine
- 6 x scallions sliced thin

- In a large bowl whisk together the juices and garlic paste, add in the oil in
- a stream, whisking, and whisk the dressing till it is emulsified. Whisk in the minced coriander and salt and pepper to taste. Add in the tomatoes, the cucumbers, the radishes, and the scallions, toss the salad to combine it well, and garnish it with the coriander sprigs.
- Serves 6.
