- 10 ounce spinach, frzn, minced (thawed and well-liquid removed)
- 1 c. cottage cheese
- 1/2 c. lowfat sour cream
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp seasoning salt
- 1 c. cheddar cheese**, grated
- 1 c. mushrooms, minced
- 1/4 tsp thyme
- 6 x Large eggs beaten
- 1/4 c. parmesan cheese

- ** A medium cheddar Tillamook cheese is preferred, of course! :)
- Preheat oven to 325 degrees.
- Combine all ingredients, except Parmesan cheese, in order given. Bake uncovered 45 min. Sprinkle with Parmesan cheese. Let stand 10 min. Cut into squares.
- Variations: Use Tillamook Monterey Jack cheese instead of Cheddar.
