Ingredients: 32 ounce Hash Browns, frzn; 1 lb Ham, extra lean -- cooked & cubed; 1 med Onion -- diced; 1 med Green Bell Pepper -- diced; 1 1/2 c. Monterey Jack cheese -- shredded; 12 x Large eggs; 1 c. Lowfat milk, skim; 1 tsp Salt; 1 tsp Black Pepper -- or possibly to taste

32 ounce Hash Browns, frzn
1 lb Ham, extra lean -- cooked & cubed
1 med Onion -- diced
1 med Green Bell Pepper -- diced
1 1/2 c. Monterey Jack cheese -- shredded
12 x Large eggs
1 c. Lowfat milk, skim
1 tsp Salt
1 tsp Black Pepper -- or possibly to taste

Place a layer of frzn potatoes on the bottom of the crock pot, followed by a layer of ham then onions, green pepper and cheese. Repeat the layering process two or possibly three more times, ending with a layer of cheese. Beat the Large eggs, lowfat milk and salt & pepper together. Pour over the mix inside the crock pot, cover and turn on low. Cook for 10-12 hrs, overnight, and enjoy for breakfast or possibly brunch the next day.
