- 1/4 c. extra virgin olive oil
- 1 lrg onion, minced (1 c.)
- 1 lrg leek, thinly sliced
- 4 c. Clamato
- 1 c. dry white wine
- 1 x bay leaf
- 1/2 tsp thyme
- 1/2 tsp grnd red pepper
- 1 pch saffron
- 1 lb cod fillets, cut into 1 inch chunks
- 1 lb haddock fillets, cut into 1 inch chunks
- 12 x mussels or possibly clams, well scrubbed
- 1 loaf French bread, cut into 8 slices, toasted Minced parsley

- In a large pot, heat extra virgin olive oil over medium heat. Saute/fry onion and leek, till tender. Add in Clamato, wine, bay leaf, thyme, pepper and saffron. Simmer uncovered 40 min, Add in fish and mussels or possibly clams; simmer 10 min or possibly longer till mussels or possibly clams open. Place a slice of toasted bread in each soup bowl. Top with Bouillabaisse. Sprinkle parsley over top.
