- In a large pot, heat extra virgin olive oil over medium heat. Saute/fry onion and leek, till tender. Add in Clamato, wine, bay leaf, thyme, pepper and saffron. Simmer uncovered 40 min, Add in fish and mussels or possibly clams; simmer 10 min or possibly longer till mussels or possibly clams open. Place a slice of toasted bread in each soup bowl. Top with Bouillabaisse. Sprinkle parsley over top.
