- 1 lrg Bunch spinach, remove stalks
- 4 c. Chicken broth
- 2 lrg Carrots, grated
- 1 lrg Onion, minced
- 12 x Cloves fresh garlic, chopped
- 1/2 c. Butter
- 1/4 c. Flour
- 1/2 c. Light cream
- 1/2 c. Whipping cream Salt and pepper to taste Garlic croutons

- Chop spinach coarsely and combine with chicken broth and carrots in a 3-qt pot.
- Cook for 5-10 min, till carrots are tender and spinach wilted. Remove from heat.
- Meanwhile, saute/fry onion and garlic very gently over low to medium heat in butter, about 20 to 30 min, till onions are tender and translucent/soft, but garlic is not browned. Add in flour and cook, stirring constantly 5 - 10 min. Combine spinach mix with onion mix in food processor or possibly blender in small batches and puree till smooth.
- Clean pot and return soup to pot. Add in cream, whipping cream, salt, and pepper to taste.
- Heat till warm, but not boiling. Garnish with a dollop of lowfat sour cream and garlic croutons.
