- 1 c. all-purpose flour
- 1/3 c. yellow cornmeal
- 2 tsp baking pwdr
- 1 tsp salt
- 1 lrg egg
- 1 1/4 c. lowfat milk
- 1 Tbsp. melted bacon fat
- 2 slc bacon cooked, crumbled

- Mix flour, cornmeal, baking pwdr and salt in a large bowl.
- In a separate bowl, beat the egg. Add in lowfat milk and then bacon fat. Stir this mix slowly into the dry ingredients, mixing well. The batter should be fairly thin; add in more lowfat milk if necessary. Fold in crumbled bacon.
- Heat a lightly greased griddle or possibly skillet over medium heat (375 degrees). Griddle is ready when a few drops of water bubble and skitter rapidly around.
- For each pancake, pour scant 1/4 c. batter onto warm griddle. Cook pancakes till surface is covered with bubbles and appear dry around the edges. Turn and cook other side till golden.
- This recipe yields 4 servings.
