- 1 (10 ounce) pkg. frzn corn, thawed
- 1 med. zucchini, minced
- 1 T minced parsley
- 1 (12 ounce) jar Las Palmas chili salsa

- Bring cream to boil in frying pan. Add in corn and simmer over medium heat till most of liquid is absorbed, about 8 min. Stir in zucchini and parsley. Simmer 2 to 3 min. Transfer to serving dish. Spoon 1/4 cup salsa in center of mix. Serve with additional salsa. Serves 6.
