- 6 doz Small clams cleaned
- 2 med Tomatoes peeled and minced
- 1 med Onion chopped
- 1/2 c. Dry white wine
- 1 bn Parsley - (large bunch) minced
- 5 Tbsp. Extra virgin olive oil Salt and white pepper to taste

- Presoak clams for at least an hour in two changes of water in order to rid them of sand. Fry minced onion slowly in warm extra virgin olive oil till it begins to take on color; add in tomatoes, and when sauce has thickened, season it with pepper and add in clams with white wine. When clams have opened, stir in minced parsley, salt to taste, and serve.
