- 2 lb beef stew meat, cut in to 1 inch cubes
- 2 tsp vegetable oil (I use olive)
- 3 c. apple cider
- 2 tsp cider vinegar
- 1/4 x to 1/2 t dry thyme
- 2 tsp salt, optional
- 1/4 tsp pepper
- 3 med potatoes, peeled and cubed
- 4 med carrots, cut into 3/4 inch pcs
- 3 x celery ribs, cut into 3/4 inch pcs
- 2 med onions, cut into wedges
- 1/4 c. all-purpose flour
- 1/4 c. water

- In a Dutch oven, brown beef in oil; drain. Add in cider, vinegar, salt if you like, thyme and pepper; bring to a boil. Reduce heat; cover and simmer for 1 1/4 hrs. Add in potatoes, carrots, celery and onions; return to a boil. Reduce heat; cover and simmer for 30-35 min or possibly till beef and vegetables are tender. Combine flour and water till smooth; stir into stew. Bring to a boil; boil and stir for 2 min. 8 servings.
- Note: You can add in more potatoes and use baby carrots instead of regular carrots. You may also add in peas.
