- 5 Tbsp. Raspberry jam
- 4 1/2 ounce Fine-quality bittersweet chocolate minced fine
- 1 ounce Unsweetened chocolate minced fine
- 1 Tbsp. Cassis - (to 2 tbspns) or possibly to taste

- In a heavy saucepan bring the cream to a simmer with the jam, whisking, remove the pan from the heat, and add in the chocolates and a healthy pinch of salt. Let the mix stand for 3 min, whisk it till it is smooth, and whisk in the cassis. Strain the sauce through a fine sieve set over a bowl and serve it hot over ice cream. This sauce hardens into a chewy candy when poured over ice cream.
