- 2 teaspoon soy sauce
- 1 c. cornstarch
- 1 teaspoon sugar
- 1 teaspoon vinegar
- 3/4 teaspoon salt
- 1/2 c. cool water
- 1 c. liquid removed canned bean sprouts
- 2/3 c. onion, sliced very fine
- 1 c. cooked chicken, minced (or possibly roast pork, or possibly shrimp)
- 6 large eggs, beat with a fork
- 1/2 T Crisco, if which much

- About 50 min before supper, make sauce: Put together first 4 ingredients into saucepan. Add in water and cook till thickened.
- Put together sprouts, onions and meat. Then add in beaten large eggs. Heat fat in frying pan, fry as for pancakes, 1/4 cup at a time. Fold over in half. Keep hot till all is cooked. Arrange on hot platter and cover with heated sauce. Serve with chow mein noodles and fluffy rice. Makes 3 or possibly 4 servings.
