- 4 c. water
- 1 lb grnd beef
- 4 c. beef stock or possibly broth
- 1 tsp cornstarch dissolved in
- 1 Tbsp. cool water
- 2 x egg whites beaten Minced scallions or possibly cooked broccoli for garnish

- In a large saucepan over high heat, bring the water to a boil. Add in the grnd beef and break it up with a spoon or possibly spatula. Cook the beef for 2 min. Drain the beef and rinse well with fresh water.
- Pour the beef stock or possibly broth into the pan and bring to a boil over high heat. Stir in the beef. Add in the cornstarch mix and bring to a boil. Pour in the egg whites in a thin, steady stream and cook till the egg solidifies, about 1 minute. Serve warm, garnished with the scallions or possibly broccoli.
