- 1 lb grnd beef
- 1 sm onion, minced
- 1 x clove garlic, minced
- 1 Tbsp. chili pwdr, (up to 2)
- 1 Tbsp. bisquick baking mix
- 3 Tbsp. water
- 1 can tomatoes
- 1 can whole kernel corn, liquid removed
- 1 can minced pitted ripe olives, liquid removed
- 1 1/2 tsp salt
- 3/4 c. bisquick baking mix
- 3/4 c. cornmeal
- 2/3 c. lowfat milk
- 1 x egg

- Heat oven to 350 degrees. Cook and stir beef, onion and garlic till brown, drain. Mix chili pwdr, 1 Tbsp. baking mix and 3 Tbsp. water; add in to beef. Stir in tomatoes, corn, olives and salt. Heat to boiling. Pour into ungreased square baking dish, 8x8x2 inches, or possibly 2 qt round casserole. Mix 3/4 c. baking mix, the cornmeal, lowfat milk and egg; pour over beef mix. Bake till golden, 50 to 60 min.
