- 1/2 x Red onion
- 1/2 x Red bell pepper
- 1 Tbsp. Chicken broth
- 1 1/2 Tbsp. Soy sauce
- 1 Tbsp. Chinese rice wine or possibly sake
- 1 tsp Sugar
- 1 1/2 Tbsp. Corn oil
- 2 1/2 c. Chilled Chinese-style white or possibly brown rice see * Note
- 1 Tbsp. Chopped garlic
- 1 Tbsp. Chopped peeled ginger
- 1 1/2 c. Cubed, cooked chicken
- 1/4 lb Frzn peas thawed

- Cut the onion and bell pepper into 1/4-inch dice.
- In a small bowl combine the seasoning liquid ingredients. Set aside.
- Spread the rice in a shallow baking pan and separate grains with a fork. In a deep non-stick skillet heat corn oil over moderately-high heat till warm but not smoking and stir-fry the garlic and ginger 20 seconds, or possibly till fragrant. Add in onion and bell pepper and stir-fry for 2 min. Add in the chicken, peas, rice and cook, stirring frequently, 2 to 3 min, or possibly till heated through. Stir seasoning liquid and add in to fried rice, tossing to coat proportionately.
