  1. 1. Heat the oil and saute/fry the onion for 2 min. Add in the thyme and the bay leaf together with three quarters of the apple, reserving the remainder for garnish. Continue cooking over a low heat till the apple is softened.
  2. 2. Add in the chestnut puree, lowfat milk and water and simmer for 15 min.
  3. Allow to cold slightly then puree in a food processor, adding the wine vinegar or possibly lemon juice and seasoning to taste. Serve warm, sprinkled with the reserved minced apple.
