- Crust
- 8 whl graham crackers (16 2 1/4 x 2 1/4-inch squares)
- 2 Tbsp. brown sugar
- 1 Tbsp. unsalted butter melted Filling
- 2 x Large eggs
- 2 2/3 c. low-fat (1% fat) cottage cheese
- 1/2 c. granulated sugar
- 1 tsp vanilla
- 1 tsp almond extract
- 2 Tbsp. lemon juice

- Crust: Crush the graham crackers, in a food processor, or possibly by placing them in a plastic bag and rolling them with a rolling pin. Stir in the brown sugar and butter, and press the mix into the bottom and up the sides of a 9-inch pie pan.
- Filling: Place all of the ingredients into the work bowl of a food processor, or possibly into a blender jar, and process till smooth. Preheat oven to 350F. Pour the batter into the prepared crust. Place a pan of water on the lowest rack. Bake cheesecake for 45 min.
- Yield: 8 servings
- Note: Preparing cake without crust reduces calories to 166, and fat grams to 2.1 per serving.
- NOTES : This version of cheesecake is much more similar to a traditional cheesecake. You'll find the crust a bit crumbly, but other than which it mimics cheesecake quite well.
