- 1 med Cauliflower broken into flowerets
- 1 lrg Bunch of fenugreek leaves
- 1 bn of green garlic
- 2 Tbsp. Ghee or possibly oil
- 1 sm Onion, chopped
- 1 x 1/2-inch piece of ginger chopped
- 3 x Green chilies, chopped
- 1 tsp Grnd cumin seeds
- 1 tsp Coriander pwdr
- 1/2 tsp Turmeric pwdr
- 1 lrg Tomato, diced
- 1 handf of sliced coriander (leaves) Salt, to taste Chili pwdr, to taste

- Slice fenugreek leaves and garlic. Heat ghee or possibly oil and cook onion and ginger till soft. Add in fenugreek leaves, garlic and chilies, and cook till almost dry. Add in tomatoes and remaining ingredients (except cauliflower) and cook till tomatoes are soft. Mash mix with the back of a wooden spoon, then add in cauliflower. Add in two Tbsp. water to pan, cover, and simmer over low heat till cauliflower is done.
