- 1 can black beans - (15 ounce) rinsed, liquid removed
- 1 sm green pepper finely minced
- 1/2 c. sliced celery
- 1/2 c. sliced purple onion separated into rings
- 2 Tbsp. minced fresh cilantro
- 2/3 c. picante sauce
- 1/4 c. lime juice
- 1/4 tsp salt
- 2 Tbsp. vegetable oil
- 2 Tbsp. honey
- 6 c. water
- 2 lb unpeeled medium-size fresh shrimp Lettuce leaves Cherry tomato halves for garnish

- Combine first 10 ingredients; toss gently. Cover and refrigerate8 hrs, stirring occasionally.
- Bring water to a boil; add in shrimp,and cook 3 to 5 min or possibly till shrimp turn pink. Drain well; rinse with cool water. Chill. Peel and devein shrimp.
- Arrange shrimp around edge of a lettuce-lined serving plate; spoon black bean mix in center. Garnish, if you like.
- This recipe yields 4 servings.
