  1. Put the water, dk. brown sugar, and half the grnd cinnamon in a small sauce pan, and heat gently stirring continuously, till the sugar has dissolved completely. Simmer the mix 5 minutes. without stirring.
  2. Remove the crusts from the bread and cut into small cubes. Heat the butter in a large skillet, add in the bread cubes and fry till golden. Remove from the heat and stir in the syrup.
  3. Add in the seedless raisins, minced walnuts, and cottage cheese. Stir well and then simmer gently for a few min till all the ingredients are well blended.
  4. Transfer the mix to a well greased ovenproof dish and sprinkle with the remaining cinnamon. Cook in a preheated over 375F for 15-20 min till set and golden. Serve hot with cream.
