- 4 lrg Peaches*, pureed or possibly chopped
- 1 1/4 c. Light brown sugar, divided, firmly packed
- 1 Tbsp. Lemon juice
- 1 1/2 c. Lowfat milk
- 3 x Large eggs, beaten
- 1 1/2 c. Whipping cream
- 1 tsp Vanilla extract

- Into pureed or possibly chopped peaches, stir 1/2 c. sugar and lemon juice; set aside. Combine lowfat milk, Large eggs, and remaining sugar in medium saucepan. Cook over low heat, stirring constantly, till mix thickens and coats spoon
- (160F), about 15 min. Stir in cream and vanilla extract. Chill. Stir peach mix into cream mix; freeze in ice cream maker according to manufacturer's directions.
- Makes about 2 qts.
- NOTES :*About one lb.; one 16-ounce. package frzn unsweetened peaches, thawed, may be substituted for fresh peaches.
