Ingredients: 1 bn broccoli (1 1/2 lbs); 6 1/2 c. vegetable broth (to 7 c.); 1 Tbsp. grated lemon rind; 2 Tbsp. fresh lemon juice; 1 Tbsp. extra virgin olive oil; 1 med leek (4 ounce 1 c.) split in half lengthwise - thinly sliced; 2 c. arborio rice; 1 c. dry white wine; 1/2 tsp salt; 1/4 tsp black pepper; 1/4 c. Italian parsley chopped

Ингредиенты

1 bn broccoli (1 1/2 lbs)
6 1/2 c. vegetable broth (to 7 c.)
1 Tbsp. grated lemon rind
2 Tbsp. fresh lemon juice
1 Tbsp. extra virgin olive oil
1 med leek (4 ounce 1 c.) split in half lengthwise - thinly sliced
2 c. arborio rice
1 c. dry white wine
1/2 tsp salt
1/4 tsp black pepper
1/4 c. Italian parsley chopped

Инструкции

Steam broccoli florets till barely tender. Saute/fry leek and broccoli stems till barely tender.Cook the rice in broth, wine and juice. Add in broccoli after the rice is cooked and heat. Serve with parsley.
