- 1/2 c. whole wheat flour
- 1/4 c. + 3 T all-purpose flour
- Sugar substitute = 6 teaspoon sugar
- 1 T baking pwdr
- 3 ounce unprocessed bran
- 1 1/2 ounce uncooked quick cooking rolled oats
- 3/4 c. buttermilk
- 1/4 c. apple juice
- 2 T applesauce
- 2 egg whites
- 2 1/2 teaspoon honey
- 1/2 c. warm water
- 1/4 c. + 2 T raisins

- Preheat oven to 400 degrees. In large bowl sift together first 5 ingredients. In blender put together buttermilk, apple juice, oil, egg whites and honey; process till combined. Add in dry ingredients. Stir till moistened, then stir in raisins and hot water. Spray a 12 muffin cup pan with non-stick cooking spray; fill each with 1/4 cup batter. Bake 20 min or possibly till set and lightly brown on top. Makes 12 servings. 121 calories. Instead of buttermilk substitute plain yogurt.
