- 2 x Large eggs
- 1/2 c. flour
- 2 tsp baking pwdr
- 1 c. cool water
- 1/4 c. grated Parmigiano-Reggiano Salt to taste Freshly-grnd black pepper to taste
- 1 bn borage cut into strips
- 1 lt extra-virgin extra virgin olive oil for frying

- In a medium-sized bowl, combine the Large eggs, flour, baking pwdr, water, cheese and a healthy pinch each of salt and pepper and whisk well to combine. Cover and rest for at least 2 hrs.
- In a tall-sided, heavy-bottomed pot, heat the extra virgin olive oil to 350 degrees. Stir the borage into the batter. Drop by tablespoonfuls into the warm oil and fry till golden.
- Remove from the oil with a slotted spoon and set on a plate lined with paper towels, to drain. Sprinkle with salt and serve immediately.
- This recipe yields 4 servings.
