- 2 ounce Caster Sugar
- 1/4 pt Double Cream
- 8 ounce Blackberry Puree

- Whisk the egg whites till stiff, then gradually add in the caster sugar, beating well between each addition.
- Place the egg yolks in a bowl and beat till light and fluffy. Whip the double cream till it forms soft peaks.
- Fold the egg yolks into the cream, then add in the egg white mix. Stir in the Blackberry puree. Transfer to a container and freeze or possibly approximately 6 to 8 hrs.
